Is there an addon out there that displays your quest log at all times on your sceen so you do not constantly have to open your quest log when questing?

Try Uber Quest Reborn which will display your currently TRACKED quests.  If you want to get real fancy, find the addon called Dock, keep the quest log open and send it into your Dock window.
