Any plate with spirit on it would be just plain weird. Healadins don't want spirit. In fact, they dont worry too much about mana regen on their gear at least because they get it back through crits (you have to spec into that talent though). At least for lvling, look for Int, SP and then Stam, but I agree it's hard to find that kind of gear in original (vanilla) WoW. Probably the best places to find what you need are looking at boss loot tables (atlasloot enhanced is a great mod for this) and getting pieces in instances because I dont know how much healing plate drops just randomly out in the world. When you get to about your mid 60's or so you start finding more stuff like you want for lvl 80. You're looking more for Int, crit, haste, and SP at 80 and that really isn't that hard to get at that point.
For lvling a tank, you want as much stam and str as you can get, but by 80 you need to be focusing also on avoidance/mitigation (dodge and parry are your avoidance stats, shield block rating is your mitigation). Again, by 65ish to 70ish it's not hard to find that kind of thing, but by 80 it's even easier. At least for an 80 tank trying to gear up, your top priority should be being defense capped (540 for raiding, 535 for heroic instances), then having high enough stam to survive a few hits. After that, avoidance/mitigation. Your total avoidance/Mitigation should be 102.4% (with holy shield) and there are plenty of macros out there to help you determine yours.
