Oh good, another altoholic like me! This may or may not help you decide what to play, but let me tell you what I have going so far...
My first character was a BE Mage but frost spec and I hated her so bad I eventually deleted her (at lvl 20) and re-rolled as fire. Fire > frost, IMO... Yeah I could have just respecced her, but I wanted to change her looks anyway, and I am much happier with her now. Lot more fun to play, doesn't die as often, does more damage. Lvl 22 or 23, I can't remember and with it being Tuesday, I can't check.
My second character was a BE hunter... I like blood elves, can you tell? She's lvl 25 and has a nice bear for a pet, but hunters are pretty button intensive. I came to WoW by way of Diablo 2, so mages and hunters I was pretty familiar with already.
I've played all the classes... don't care for druids, I don't have one now... don't care for warriors, mine (Taurean) is lvl 10 and has been for ages. Don't care for shaman, got one (Troll) to lvl 12 and she's been stuck there for months. Paladins are okay (honestly Draenei are better than BE) but it's not my FAVORITE class, my BE pally is lvl 11. I've got a lvl 20 BE rogue and a lvl 16 undead warlock going, as well as a 2nd orc hunter that's lvl 15, but my absolute favorite class to play overall is Priests. I have two... my main is a BE lvl 47 and my up-and-coming one is a Troll lvl 24. I started my BE priest off as shadow spec and the troll priest as holy, but have since re-tooled both of them so now the 47 is holy and the troll is more fittingly shadow, it goes well with some racial traits she has.
The reason I have all 10 going is for all the professions and to have some gatherers besides, but honestly my gatherers aren't getting as much playtime as my crafters. And I've killed off some alts to make room for the mix of 10 I have now... in fact the 47 priest came about only after I decided to do away with the taurean druid I wasn't loving to make room for her. She was the last alt I made of the 10, and she's been so much fun to play it wasn't long before she outleveled all my others, and she's on track to be my first 70. She's also a tailor and a miner, which is an odd combination, but I knew she'd be out more, and I needed mats for the JC, eng and BS alts.
As for the rest... my second priest is an herb/alc, the BE hunter is a LW/skinner, mage is JC/miner, Pally is Eng/Miner, warlock was my first tailor and herbalist but I'll probably trade tailor for skinner whenever I play her again, shaman was alc/herb but will probably also be skin/herb at some point... if I don't just delete her... I may do that and roll a third priest, probably undead, to see what the discipline talents are all about. But not till the first one gets to 70. The second hunter and the warrior are both gatherers... some combo of herb/skin/mine. Which leaves my rogue, who is my smith and enchanter, and she's fun to play too.
But I still think priests pwn all the other classes, so priest definitely would get my vote for best class. Healers are popular (I'm forever getting random whispers to heal dungeons), priests also can do a fair amount of damage, and with help from guildies or friends, she's gotten to see a lot more of the maps than her level alone would have allowed her to do. She solos well but is awesome as support, too...
As for how to pick the best, it looks like you're on the right road already, just try them all, lvl them up decently, and decide what style suits you best. I had no idea I'd love priests so much when I started with my first mage and hunter, just started the priest because I really hadn't tried it yet, and haven't looked back.
