I have had WoW running over 3 monitors using Matrox Hardare called "TripleHead2Go".

Basically, it makes extra resolutions available under windows, and many games such as World of Warcraft will make these resolutions available in game - the Maximum resolution possible being 3840 x 1024.
Matrox also sell an adaptor that runs over 2 montiors called the "DualHead2Go" with a maximum resolution of 2560 x 1024.
These set ups work best when you have monitors of exactly the same type with small bezels (screen borders surrounding the LCD/glass).
These resolutions and set ups will allow you to do something like you say, but I believe that the center of your World View will always fall on the split between your left and right monitors with a 2 monitor set up, and you still wouldn't be able to just put the UI on one screen and the World view on another.
With 3 monitors this is less troublesome as the center of your World View would fall in the middle of the center monitor, and you would only see the screen splits when glancing left and right at your UI components like Chat or the Minimap.
The final warning is that this "Widescreen" mode works by letterboxing your view of the world which means that you actually see LESS of the World than you do with a normal single screen view. I know this sounds wierd, but the fact you do see the world across 3 (or 2) screens gives you the feeling of a huge panoramic view is just an illusion.
What is really happening is that the game takes a normal 1280x1024 screen shot and the chops off some of the top and bottom of the screen and then Zooms in on the remaining letter box shape - which means you lose a lot of the viewing angle at the top of the screen especially, foreshortening your view.
Effectively, I found the 3 screen view was fantastic for working in Windows, and for Grand Prix 2 it was AMAZING - so other Driving programs might also be excellent.
BUT I found the aspect ratio with many FPS games to be totally bizarre and unplayable, and I always reverted to playing WoW on a single screen.
AMAZINGLY - Matrox seem to have closed their User Forums where I found a HUGE amount of support when I was initially trying to set up games with TH2G. Otherwise I would have pasted a link to them....
